Many of you are familiar with Celso Minussi, one of our top coffees from Brazil year after year. Celso is a first-generation farmer who taught himself to grow and process coffee. In 2008, he joined our partners Fazenda Ambiental Fortaleza (FAF) to further develop his techniques. Our microlot has very balanced flavours of chocolate ganache, caramel, dates and Brazil nuts. Coupled with fruity notes of green grapes and mandarin, this cup is as exciting as it is smooth.
FAF lead the way for sustainable farming in Brazil, which means that Celso’s dedication is reinforced with the best support available. After harvesting, the coffee is sorted electronically to ensure only the best beans are included in our lot. The coffee is dried on raised beds and systematically turned to ensure even airflow and sun exposure. Steep terrain makes for challenging manual work but provides an ideal habitat for polyculture. The trees that grow next to Celso’s coffee provide essential growing shade and sustain diverse wildlife that improve soil quality.
