The Hario Mizudashi: Cold Brewing At Home

​​Throughout the summer, we love drinking cold brew. This delicious brew method allows a gentle extraction, producing balanced, flavoursome cups. Unlike other methods that rely on quickly cooling down hot coffee, our preferred cold brew method relies on room temperature brewing. The result is a balanced, nuanced brew: a perfect choice for the warmer months.

The Hario Mizudashi is one of the easiest ways to enjoy cold brew coffee at home. Drawing on all their expertise, Hario have produced a brewer that is elegant in its simplicity and ready to deliver superb flavour, again and again. Easy to use and maintain, the Mizudashi fits neatly in the door of your fridge - fresh cold brew waiting to be enjoyed will become a true summer pleasure!

When choosing a coffee for cold brew, it is always good to bear in mind that the flavour will be a little different to a warm brew. With our Mizudashi method, you can expect prominent sweetness and texture, with slightly more subtle acidity. Enjoy!

The Method

The Mizudashi brewer is a brilliantly simple cold brewer, with glass carafe and filter that bring cold brew at home just a few steps (and a little bit of time) away. We love the Mizudashi but this recipe is also ideal for a range of different Cold Brewers. Based on a brew ratio of 1:10, we use 50g of medium-coarse coffee to 500g of water, with a total brew time of 17 hours.

1. First, weigh and grind your coffee, medium-coarse (approximately 4 clicks coarser than your normal V60 setting on a Comandante).

2. Add the coffee to your cold brewer, followed by the water. For the Mizudashi, we do this in three stages, allowing the coffee to filter through. Stir the coffee and water to ensure all coffee is in contract with the water.

3. Place the lid on the Mizudashi and allow your coffee to brew for a total time of 17 hours. Remove the filter containing the coffee grounds and your coffee is ready to serve over ice. Give the carafe a quick swirl so coffee solubles are distributed evenly, then pour. Alternatively, place the coffee in the fridge to cool.
