The Chemex Brewer was invented by Peter Schlumbohm in 1941 in Chicago, USA. Being a chemist, Peter understood extraction of flavor and caffeine very well. This resulted in the Chemex being not only a beautiful piece of design, but functional too – probably why it is part of MoMA’s permanent exhibition in New York.
The paper used for Chemex filters is slightly thicker than most, which creates incredibly clean brews, but requires a slightly coarser grind setting. For this reason it’s best to grind your beans just before you brew. Store your full beans in a closed, zip-locked bag at room temperature.
