Through more than 20 years of work, Marysabel Caballero and Moises Herrera have helped put the La Paz region of Honduras on the coffee map. Having combined their family farms, they now produce coffee on more than 200 hectares, split into different estates with different characteristics. Their Confite processing style uses extended fermentation to create coffees with amazing candy-like fruitiness.

The name Confite is borrowed from a popular Honduran candy consisting of dried fruit and nuts coated in sugar. This lot stood out for its tropical fruit notes and pronounced sweetness: expect papaya, pineapple, banana, and strawberry jam. The plush, creamy texture is like dulce de leche or nougat.
