Chocolate Mousse. Fig.
Descending from the highest peak in Costa Rica, the pine trees lining the steep slopes are slowly replaced by verdant coffee plants. Working across the valley, John Alvarado and his family have been instrumental in changing the reputation of coffee from Brunca.
With a focus on modern processing, Corazón de Jesús is a great example of the 'micro mill' model. This is a deliciously rich coffee, with notes of chocolate mousse and caramelised fig.

Tasting this naturally processed lot, our first thought was velvety chocolate mousse. Caramelised fig, plum, vanilla, and nutmeg follow, bringing sweet complexity. With gentle acidity, the sweetness and texture of this lot really shine.
Corazón de Jesús is situated in the shadow of the Chirripó mountain. The highest peak in Costa Rica was named as the ‘land of eternal waters’ in the indigenous language, reflecting the bountiful lakes which contribute to a unique terroir. Coffee from the Brunca region has seen amazing improvements in recent years. The Alvarado family have prioritised the production of speciality coffee beans, experimenting with the best possible combinations of cultivar and process.
The farm is part of the Bandera Azul program, an organisation that encourages sustainable production through better farming practices, environmental conservation, and responsible water management. Our lot was grown at their El Salitre Plot. Located at 1800 meters, it benefits from rich soil and weather conditions.

Selective picking helps guarantee the best possible flavour. The cherries arrive at the mill in the afternoon and are processed the next day. This naturally processed lot was dried slowly on raised beds.
This coffee was a pleasant surprise in it's balance between more earthy notes and underlying fruity acids. While I do enjoy both more fruity and funky coffees, as well as more earthy, chocolaty types, this blend of notes was novel for me and made for a very satisfying and smooth cup. I tried it as a 9Barista brew, a Weber Bird filter brew and a classic V60 and managed to get a really nice cup with all of those!

Fantastic beans. On top of my list. Delivery time to NL wasn’t too fast (although cost was high) but not too much of a problem. Recomended.
