This is a complex cup offering the best of the natural process. The profile is juicy and tropical, with abundant sweetness. Notes of papaya and mango come first, highlighted by fragrant orange blossom. As it cools, lingering sweetness is like nougat and candied fruit.
Located in San Martín Jilotepeque, Chimaltenango, La Colina - The Hill - is named for the steep elevations of the area. Antonio is the third generation of his family to farm here, and began by planting grains and pulses. However, he told us that it has always been his dream to farm coffee, and in 1991, the first coffee tree was planted.
Slowly but surely, Antonio increased the number of trees and the production capacity of La Colina. Nine years ago, Antonio built his own processing facilities, and with his focus on quality rather than quantity, he has achieved excellent rankings in the Guatemala Cup of Excellence competition.
The coffee grows within a beautiful landscape of oak, cypress, and pine. The farm benefits from multiple streams, with fresh water for irrigation and processing. Only one quarter of his farm is planted with coffee, while the rest remains native forest, certified by the National Institution of Protection of Forests.
Freshly picked cherries are transported to the dry mill and sorted, before being placed on raised beds to dry. Natural coffees from La Colina spend about 15 days in direct sun, with 11 hours of sun during the harvest season.
LA COLINA NATURAL
The Barn is a new discovery for us. Morning coffee is our most important ritual and we are finally glad to find out a roastery that takes coffee as serious as we do.
Ich mag Naturals sehr...Seit nunmehr 8 Jahren trinke ich fast ausschließlich Single Origin Kaffees. LA Colina aus Guatemala wird auf der Tüte mit Papaya, Nougat und Velvety (samtig) beschrieben. Bei meiner Filterweise (Filteraufsatz, 100ml heißes Wasser auf 6g Kaffeemehl, mittlerer bis feiner Mahlgrad, Papierfilter) kann ich von den Beschreibungen nur wenig wieder finden. Lediglich das "Samtige" wird deutlich. Der Kaffee kann aber nix für derlei Geschwurbel. Er schmeckt weniger schokoladig als kolumbianischer Vertreter und ist dahingehend deutlich schärfer im Geschmack, weniger fruchtig-säurehaltig als äthiopische Kaffees. Im Nachgang (nach dem Schlucken) bleibt eine kleine "Restschärfe" im Rachen. Nuancen die trotz heller Röstung nahe den Röstaromen sind dominieren...für meinen Geschmack etwas zu sehr! Im Vergleich zu kolubianischen Kaffees deutlich schärfer. Ich würde einen Kolumbianer bevorzugen...Die Farbe ist nach dem Filtern dunkel (schwarzbraun). Dies ist natürlich nicht objektiv und von einem Liebhaber äthiopischer Kaffees- insbesondere aus der Guji-Region- geschrieben.
