Corazón de Jesús is situated in the shadow of the Chirripó mountain. The highest peak in Costa Rica was named as the ‘land of eternal waters’ in the indigenous language, reflecting the bountiful lakes which contribute to a unique terroir. In honey processing, pulped coffee is dried with a layer of mucilage around the beans. First, freshly harvested cherries are mechanically de-pulped, removing the outer skin of the cherry. The Red Honey style sees a medium level of mucilage left surrounding the coffee beans, which darkens to a rich red colour as it dries.
