Our Plot is the result of five years working with Daterra to explore the potential of Aramosa coffee. This season, a Black Honey lot stood out for its abundant sweetness and aromatic fruit. Cherry and blueberry combine with syrupy cola notes, before oolong tea and vanilla emerge in a smooth, creamy finish. A distinctive expression of Brazilian specialty coffee.

This Black Honey Aramosa is rich, aromatic and intensely sweet. Cherry and blueberry lead the cup, layered with a syrupy character reminiscent of fruity cola. As the coffee cools, delicate oolong tea and vanilla bring elegance and complexity, balancing the concentrated fruit. The result is a smooth, creamy cup that showcases both the character of Aramosa and the potential of careful honey processing.
Five years ago, Daterra invited THE BARN to take ownership of one hectare of Aramosa plants as part of an innovative project involving only six roasters worldwide. Together, we have explored farming and processing techniques designed to elevate the quality of this distinctive coffee.
Daterra combines experimentation with a long-term commitment to sustainability. It was the first Rainforest Alliance certified coffee farm in Brazil and is now climate positive. Our partnership also includes a tree-planting programme designed to help mitigate the effects of climate change.

Our work with Daterra has explored different honey and anaerobic processing styles, experimenting with fermentation times, layers and sugar levels. This season, Black Honey delivered our favourite expression of the harvest. The coffee’s skin is removed while most of the sticky mucilage remains around the bean, encouraging a more intense fermentation. The coffee is then slowly dried on covered beds, where it develops the dark colour that gives Black Honey its name, alongside concentrated sweetness and aromatic fruit.
