This lot perfectly balances the floral characteristics of Gesha with pronounced sweetness developed in processing. Aromas of rose and honeysuckle appear first, with notes of blackcurrant, honeydew melon, and rooibos tea in the cup. The fermentation process adds depth and complexity, with acidity that is perfectly balanced and gently lactic.

Whole ripe cherries are fermented in an oxygen-rich environment without using water, yeast or any other additives – an open, natural fermentation. Once fermentation is performed with oxygen, the diversity of microorganisms is much higher than anaerobic fermentations, meaning the reactions happen faster and the whole process has to be carefully watched, so the coffee ferments correctly. After fermentation, the cherries are dried first on raised beds, before a final stage in a mechanical drier where moisture content is meticulously controlled.
