Rosemary Cascara Tonic

Cascara, meaning peel or skin in Spanish, is the dried skin of the coffee cherry. Removed during processing at the farm, producers use cascara as a rich natural fertiliser. Rarely seen outside the countries where coffee is grown, cascara can be carefully dried and brewed as a delicious fruit tea.

With a flavour profile full of peach, pineapple, and refreshing sweetness, cascara lends itself to a number of delicious preparations. Through the colder months, you will see cascara tea on our menu but for Summer 2026, we have been serving Cascara Cold Brew and Rosemary Cascara Tonic across our cafes.

Ingredients

Tall glass and ice

80ml tonic water

20ml rosemary syrup

100ml cascara cold brew

Cascara Cold Brew

Method

In a tall glass, pour 80ml of tonic water over ice. Add 20ml rosemary syrup followed by 100ml cascara cold brew. Garnish with a twist of rosemary and enjoy.

Cascara Cold Brew

25g cascara

1.5l water

Brew overnight in the fridge for 16 hours

Remove the cascara cherries

Serve in a tall glass over ice

Can be stored in the fridge for up to 7 days

Rosemary Syrup

5g rosemary

17g sugar

100g hot water

Combine and steep for 30 minutes

Strain to remove the rosemary
