One of the first specialty coffee farms in El Salvador, Finca Himalaya is known for an unrivalled approach to quality. Producer Mauricio Salaverria has built on generations of coffee knowledge and pushed the farm to another level: teaming up with experts such as former Barista World Champion, Sasa Sestic, and focusing relentlessly on quality.

Meeting Mauricio, you can sense the ambition and vision that delivers the quality found in every coffee he produces. This Maracaturra lot is an exceptional example of his dedication to terroir, variety, and process.

Mauricio owns five different farms in the regions of Ataco and Apaneca, while all coffees are processed and dried at his Divisadero washing station. Across his estates, it becomes instantly clear that his level of execution and attention to detail is in the highest league. Meticulous lot separation, different processing styles, and anaerobic tanks are all visible, while the coffee grows in lush, mountainous forest.

Maracaturra is a very large and soft bean. It is one of Mauricio's "Big three", alongside Pacamara and Maragogype. A high yielding hybrid of Maragogype and Caturra, it is believed to have naturally occurred in the late 1800s. We chose this lot for the wonderfully complex profile, magnified by the cleanest processing. In the cup, expect delicious fruity notes of boysenberry and dried fig. Rounded white chocolate and caramel sweetness is balanced with defined acidity.
