Tanzania is an exciting coffee origin: Flavours have a great range and there is so much to do in terms of farm work and bringing up producers in terms of quality. This is the fourth year we are featuring a lot from Sambewe, a collective of 344 farmers that are bundling their efforts to get better. The cup profile is rich with notes of blackberry jam, molasses, black tea and rosehip. With a sirupy mouthfeel and very balanced acidity.
The coffee at Sambewe is pulped and separated by size through washing channels and sifters. Then the coffee is fermented underwater, washed and soaked once again before drying on raised beds for two weeks. Part of this coffee´s proceeds goes to project "Coffee Club". High school students are given seedlings to be planted on their parents farms. They get guidance and are educated on how to nurture and look after their plants, as well as agronomy and accounting.
