From the prestigious Huehuetenango Highlands, we present a coffee from Finca Tzun Witz (Popti language for Concepcion Huista, the microregion). This small lot offers a classic profile of the area with delicious notes of chocolate, cherry and vanilla. A medium acidity gives this coffee a great depth and structure.
Producer Gabriel Gaspar is a member of the ADIPY Association. Which consists of small farmers from the Concepción Huista region and the neighboring municipalities (Petatan, Unión Cantinil and Jacaltenango). It was formed 25 years ago, initially to support the development of farmers in matters of food and nutritional security, protection and conservation of the forests.
In 2006, they started focusing on coffee production and the training of their associates. Since then they have focused on positioning the region’s coffee internationally and to connect to single roasters.
Gabriel Gaspar works on his small finca with 0.75 hectares only and has produced this one lot of coffee that stood out on our cupping table. Surrounded by native trees, the cherries are fully shade-grown which added to the sweetness of this coffee. Harvest time was in March 2021, so this coffee is as fresh as it gets in terms of seasonality.
