Our microlot comes from Julian Palomino who works with his wife Maria Teresa on a 4 hectar farm located at 2000 meters, planting all castillo trees. Their coffee is sweeter than others due to picking, processing and their particular microclimate. Taste notes: Pineapple, dried fruits, caramel and sugar cane are cooling into green grapes and sweet apple flavours. Complex with a refreshing citrus finish.
"When I started out the farm I met my wife Maria Teresa Paz, my companion. We share all the duties of the farm, and she reassured me about my decision to be a farmer as she comes from a family of coffee growers." The couple follows a strict protocol to improve their cup quality: Picking deep purple cherries, extending fermentation from 12 to 20 hours. Applying parabolic systems with airflow and slow, controlled drying.
