Finca El Mirador is one of the best coffee farms in a remote corner of Huehuetenango. Each year we feature a microlot that cupped best in our pre-selection of José López coffees. This season we picked a very balanced lot with intense flavours of plum, caramel, stone fruit acidity and a candy like finish. This coffee is smooth and mouthcoating.
José has been pushing the quality of El Mirador through better pruning, fertilisation and shade management, and through investments in their wet milling processes. He has recently worked with semi-washed, honey and natural processing and modernized drying patios and raised drying beds. The coffee is fully washed and soaked with fresh water for 24 hours, then dried slowly on raised beds over 15 days.
