La Fila is one of the two fincas run by Roman Flores sons (Los Chorros). This is the first year we are featuring their coffees. The very interesting thing with our first microlot here is the varietal: IH-90 was developed by the National Institute of Honduras for its increased resilience at lower growing conditions. The combination of amazing terroir and skilled processing really elevate the cup profile of this coffee with a fantastic range of flavours: Plum jam, red currants, cacao and honey melon.
Our lot is of the varietal IH-90, which is able to fully thrive on the slopes of Intibuca, where the cherry develops more slowly and ripens with distinct flavours. Giving individual plots of land to his sons and to let them experiment with their own coffees is a great way by Roman Flores to help his sons develop their own skillset and business minds.
