Cauca benefits from high altitudes, a stable climate, and volcanic soil. The mountain chain protects the coffee plantations from humidity and strong winds of the Pacific Ocean. But it is the focus on quality at Finca El Progreso that sets this coffee apart with notes of caramel, butter toffee, cacao nibs, vanilla with great candied citric notes.
This is our third year buying from Julian Palomino and his wife Maria Teresa. Their passion for coffee is high and they live by the proverb "Coffee is a blessing and every effort you invest in it pays off“. Our releationship with the farm is exclusive. We love the high sweetness in the cup - which comes from the slow ripening of the north facing coffee cherries. Fermentation time was also stretched from 12 to 20 hours, to allow the coffee to develop more flavours.
