A few years ago Mauricio Salaverria changed his farm operations aiming to be one of the best producers in his country. Since then he has won Cup of Excellence a massive 10 times. When you combine Mauricio´s passion with an extensive skill at processing, the result is this incredible natural Maracaturra. Our lot has notes of pear and milk chocolate, tied together with a gentle balancing acidity and a creamy mouthfeel.

The nutritious soil that covers the Apaneca mountain range its shade-providing trees make for an ideal coffee growing environment. Cherries are handpicked, sorted and dry slowly over 12-15 days on raised beds. Mauricio has spent years experimenting with both honey and natural processed coffees, but his patience and hand-crafted approach is what has made him an expert. The Maracaturra varietal we are featuring from Finca Himalaya is one of Mauricio's most promising new crops - it has the bean size and balance cup profile associated with the Maragogype hybrids, but on a more productive plant with higher agricultural resilience.
