Finca Himalaya is in family hands since 1880. A lot has happened in the past 10 years though: Mauricio Salaverria has taken generations of coffee knowledge and pushed it to another level. He teamed up with experts such as former Barista World Champion, Sasa Sestic, and relentlessly worked on quality for years. Our beautiful washed red bourbon has notes of milk chocolate, cacao nibs and cola. The cup is round with a creamy mouthfeel.
Mauricio owns several farms in the micro-region and all coffees are being processed and dried at his Divisadero washing station. Walking the station and the adjoining farm, it becomes instantly clear that the level of execution is in another league. Lot separation, different processing styles, huge wooden wine crates and anaerobic tanks are very visible. Meeting Mauricio you can sense the ambition and vision of this producer that drives him to get better.
The farm has 24 hectares and plants Bourbon, Caturra, Pacas, Pacamara, Geisha, Maragogype, Maracaturra and Kenyan SL28/34. Finca Himalaya has an excellent terroir with clay and volcanic soils, it produces coffees often awarded with the Cup of Excellence.
