|Origin:||Minas Gerais, Brazil|
The Um Family are Korean descendants. They work with the precision of their Korean minds and the passion of their Brazilian hearts. Located in the southeast of Minas Gerais, the farm benefits from higher elevation and ample rainfall. Our lot this season has notes of dark chocolate and fresh dates - with an elegant acidity.
Read MoreStefano Um took over the dormant farmland in a prestige location only a few years ago. He saw the potential and teamed up with FAF to push quality to the highest level. We are proud that we were the buyers of their first harvest and our relationship keeps growing. Fazenda Ambiental Fortaleza’s (FAF) made a radical change from conventional farming to sustainable practices in 2001. Our coffee is a collaboration of FAF and Fazenda Um all the way from providing the seedlings through to drying and milling. Grown on a section of the farm dedicated specially to sustainable production, each step is handled delicately with attention to detail. The coffee is dried on raised beds in shade for 3 weeks before the drying is completed with the Volcano Method.
