Translated "The viewing point“, El Mirador is located in a prime location at 1725-1800 meters elevation in Huehuetenango. Neighboring El Durazno, the favourable micro-climate and nutritious soil are laying the base for great coffees. We have been working with El Mirador for many years. This season we have selected a microlot with a bold body and flavours of caramel fudge, milk chocolate, amaretto and orange.
The estate is operated by José López, who is a forward thinking agronomist focusing on improvements in farm management and processing. Cherries are running through a semi-wet receiver and floater tanks before removing the skins. After automatic sorting by size, the beans undergo a 48 hour dry fermentation, followed by soaking and grading channels. Drip drying takes place on the patios. The beans are then moved to raised drying beds at a second station located at 1000 meters to provide better temperatures for slow drying. All water is recycled. El Mirador produces flavour profile that are crystal clear, and a great representation of Guatemalan terroir.
