Our first ever Mexican coffee comes from the Chiapas region which shares a border with Guatemala. Breathtaking volcanoes regulate the wind and moisture flows, while also offering nutritious soil. We chose our microlot for its complex flavour profile: Dark fruits, plum, nectarine and rhubarb are complemented by an intense sweetness of maple syrup and molasses.
Abel Sanchez is a small-holder who is part of an ongoing Cafeologia project that uplifts Mayan communities through knowledge-sharing and the production of high-grade coffees. Connected to 35 other micro-producers Abel can grow his microlot coffee with the best agricultural support available. Our coffee is produced with sustainable farming whereby plants grow in gardens under the shade of endemic wildlife. As always, we are happy to pay a high premium for increased cup quality. We believe that empowering Abel for the value he has added is a way to fundamentally change the supply chain, and support a new coffee growing culture.
