Sorting does not end at farm level. Dry mills work predominantly with gravity to sort out lower qualities (unripe, defects, different screen sizes) and remove the parchment (clean the coffees). The dry mill gets the coffee ready for export and also does the quality check on coffees (cupping).
We prefer working with dry mills that can keep our microlots separate and operate with accuracy and attention to detail. Bringing the secondary defects close to zero is our goal. Optical sorters and UV-light controls are additional steps in managing top qualities.
