Acidity

BREWING

Acidity in coffee is essential for balance. It can be identified as the bright, or even sparkling sensation that can be present in high-quality coffee. The main source of acidity in coffee is chlorogenic acid, which breaks down with heat. This is why darker roasted coffees tend to be lower in perceived acidity.
